1 kilo MAGNOLIA FREE RANGE CHICKEN, cut into 8 pieces

3 tbsp garlic, minced

1/2 cup crushed and roughly chopped lemongrass (bulbs only)

1/2 cup tamarind leaves


3 1/2 chopped ginger

1 tsp rock salt

1 bundle banana leaves

  • In a bowl, marinate chicken with garlic, lemongrass, tamarind leaves, oil, ginger, salt and pepper for at least 1 hour.

  • Line a deep pot with banana leaves. Place chicken at the center and completely cover with remaining banana leaves.

  • Cover pot and cook for 1 hour or until chicken is tender
